This tsipouro is without anise and is produced from seven different local grape varieties from low yields. A distillate with a delicate and aromatic character, clean and elegant aromas, a round mouthful and a fruity aftertaste. This production is one of the best expressions of well made tsipouro.
An awarded choice by BARTENDER SPIRITS AWARDS
Raw material: Pomace from carefully selected, ripe and healthy grapes, which are cultivated in the Valley of the Muses and come only from Greek white grape varieties, like Assyrtiko, Savatiano, Malagouzia, Koudoura and Athiri.
Distillation process: The pomace of each variety is distilled separately, in a copper alembic, drop by drop and at a low temperature. This way only the noblest aromatic compounds are obtained. The heads and tails of the distillate are discarded, in order to keep only the heart, which is redistilled following the same slow and gentle process. Finally, the separate distillates are blended in different ratios. The aim is to create a tsipouro with a balanced taste and a consistent quality.
